<p>4 cups litchi (chopped and seedless)</p>
<p>1 ltr condensed milk</p>
<p>1 teaspoon vanilla extract</p>
<p>2 teaspoons honey or agave nectar, or to taste</p>
<p>Ice cubes, optional</p>
<p><strong>Procedure</strong></p>
<p>Mix the chopped litchi’s, milk and sugar.</p>
<p>Blend and make a thick drink.</p>
<p>Add the vanilla extract, honey or agave nectar, and ice cubes (if using) and process.</p>
<p>Pour into the serving glasses and refrigerate for few hours.</p>
<p>Serve immediately in tall glasses, or chill until ready to serve.</p>

<p><strong>Ingredients for Chilli Paneer</strong></p>
<p>Green Capsicum, sliced lengthwise &#8211; 1</p>
<p>Oil &#8211; 2-3 tbsp</p>
<p>Cheese (Paneer) - 250 gms</p>
<p>Crushed garlic &#8211; 3-4 flakes</p>
<p>Soya sauce &#8211; 2-3 tsp</p>
<p>Green chillies &#8211; 2-3</p>
<p>Thickly sliced onions &#8211; 1 big</p>
<p>Chilly sauce &#8211; 1 tbsp</p>
<p>Tomato sauce &#8211; 1 tbsp</p>
<p>Black pepper &#8211; 1 tsp</p>
<p>Garam Masala &#8211; 1 tsp</p>
<p>Salt to taste</p>
<p><strong>Method of Chilly Paneer</strong></p>
<p>Cut the cottage cheese into medium sized chunks. Heat oil in a pan, roll the pieces of cheese in some of cornflour and deep fry on medium flame until the edges turn light brown color.</p>
<p>Take out the cheese cubes and keep aside. Now add garlic and green chilly in same oil, fry for a minute. Add onion and stir lightly.</p>
<p>Onion should become little crunchy, add capsicum (Green Pepper / Shimla mirch) and stir for a minute. Add black pepper, salt, garam masala and mix in.</p>
<p>Add chilly sauce, tomato sauce, soya sauce and mix. Stir for few minutes. Finally add fried paneer cubes to the mixture. Tasty chilly paneer is completely ready to serve at home.</p>

<p>2 tbsp &#8211; Sabudana</p>
<p>5 &#8211; Boiled Potato</p>
<p>3 &#8211; Green Chillies</p>
<p>Sendha Namak</p>
<p>Oil – for frying</p>
<p>Red &#8211; Chilli Powder</p>
<p><strong>Method:</strong></p>
<p>-Soak sago in a cup of water for 1 hour.</p>
<p>-Drain and keep aside.</p>
<p>-Peel and grate boiled potatoes.</p>
<p>-Add the deseeded and chopped green chillies, ginger, coriander, onion, chopped curry leaves, drained sago, salt, chaat masala and red chilli powder.</p>
<p>-Mix well with a wooden spoon.</p>
<p>-Divide into 16 portions and shape into round patties, using a little oil on your palms.</p>
<p>-Deep fry the patties until they are crisp and golden brown.</p>
<p>-Serve with tomato ketchup.</p>

<p>-<strong>Chopped Almonda</strong>-25gms</p>
<p><strong>Method:</strong></p>
<p>To making stiff dough prepare covering sieve flour and rub in three tablespoons of ghee and add some cold water with that. Cover it with a wet cloth and keep it aside. Sauté’ the milk fudge (khoya) in low flame and until to get the smooth fragrant. Make a mixture of coconut, cashewnuts, almonds, raisins and allow the mixture to cold. Started making ball for the dough and roll each ball into a small round of 4 inch diameter, fill the khoya mixture on the half of the round and after fold it and seal the round .Prepare all the gujiyas and keep it in the cloth. On a medium flame heat the ghee/ refined and deep fry the gujiyas, when it colour is golden or brawn remove it from refined. Store it on airtight glass jar</p>

<p>2 Onions (chopped)</p>
<p>Oil – for cooking</p>
<p>4 slices Bread (each cut into 2 pieces)</p>
<p>3 Green Chillies (chopped)</p>
<p>1/2 cup Yogurt</p>
<p>1 tbsp Coriander Leaves (chopped)</p>
<p>1/2 cup &#8211; Besan/ Chickpea flour</p>
<p>1 tsp Salt</p>
<p>1/2 cup &#8211; Water</p>
<p>1 tbsp &#8211; Rice Flour</p>
<p>1 pinch Turmeric Powder</p>
<p>1/2 cup Rava/Sooji/Semolina</p>
<p><strong>For Sweet Version</strong></p>
<p>Sugar -1 tbsp or to taste</p>
<p>Vanilla Extract – 1/2 tsp</p>
<p><strong>Method for Toast</strong></p>
<p>-  Sift the Chickpea Flour with Baking Soda and the Rice Flour.</p>
<p>-  Add sooji, Yogurt and Water and mix.</p>
<p>-  Mix in the ingredients for either the Sweet Version or the Savory Version.</p>
<p>- Heat a griddle or a skillet and drizzle a little Oil.</p>
<p>- Cut Bread Slices and dip in the batter (on both sides).</p>
<p>-  Place on the hot griddle and cook for a couple of minutes.</p>
<p>-  Drizzle a little Oil on the top-side and flip the toast.</p>
<p>-  Allow the Toast to cook on the under-side for a few minutes.</p>
<p>-  Once done, remove and serve hot off the stove.</p>
<p>-  For Sweet Version – serve with powdered sugar or maple syrup.</p>
<p>-  For Savory Version – serve with ketchup or chutney.</p>

<p>225 grams butter</p>
<p>225 grams sugar</p>
<p>225 grams flour</p>
<p>4 large eggs</p>
<p>1 vanilla bean</p>
<p>1 tsp baking powder</p>
<p>250 grams strawberries</p>
<p>1 Tbsp milk</p>
<p><strong>Process for the Filling</strong></p>
<p>-In a pot put strawberry jam with some warm water.</p>
<p>-Put it on heat until the jam and water form a liquid paste. Then add the lemon juice.</p>
<p>-In another pot put cream, sugar and whisk until soft peaks are formed. Add cream and whisk again.</p>
<p>-Once the jam mixture comes to a boil add strawberries and mix.</p>
<p><strong>Process for Sponge</strong></p>
<p>-In a mixer put sugar, butter along with eggs and mix.</p>
<p>-Include flour, baking powder, little bit of vanilla beans along with milk to the above mixture and mix again.</p>
<p>-Transfer the mixture In 2 different buttered and floured trays.</p>
<p>-Flat it out nice and evenly.</p>
<p>-Bake in an oven set at 180 degress for about 20-25 minutes.</p>
<p><strong>Preparation for Victoria Sponge Cake</strong></p>
<p>-On the baked sponge spread some cream as the 1st layer and then spread the strawberry mix as the next layer.</p>
<p>-Then add the strawberry pieces and then place the other sponge cake on top of it.</p>
<p>-Lastly dust some icing sugar.</p>

<p><strong>Ingredients</strong></p>
<p>250 gm crushed paneer or ricotta cheese</p>
<p>60 gm sugar</p>
<p>450 gm canned pineapple &#8211; crushed</p>
<p>2 tbsp ghee</p>
<p>Few drops of yellow food color (optional)</p>
<p>A pinch of saffron</p>
<p>Pistachios &#8211; sliced</p>
<p><strong>Method</strong></p>
<p>Mix the cheese, ghee and crushed pineapple in a pan and bring to a boil.</p>
<p>Once it starts to bubble, add the yellow food color.</p>
<p>Cover and let it cook on medium till the water evaporates.</p>
<p>Add the sugar and saffron and saute it for 5-10 minutes or till it leaves the sides of the pan.</p>
<p>Transfer on to a serving dish and garnish with chopped pistachios.</p>

<p>-500 gms fish<br />
-1 tablespoon thyme seed (ajwain)<br />
-45 ml cream<br />
-2 teaspoon cumin powder<br />
-2 teaspoon garam masala<br />
-1 tablespoon garlic paste<br />
-20 gms besan<br />
-30 ml lime juice<br />
-5 tablespoon mint or coriander chutney<br />
-1 onion lachha (the way we chop in salad)<br />
-½ teaspoon white pepper powder<br />
-60 gms yogurt<br />
-Salt and red chilli powder according to taste</p>
<p><strong>How to make Tandoori Fish Tikka?</strong></p>
<p><strong>-</strong>Mix all ingredients except fish.<br />
<strong>-</strong>Now rub this mixture on the pieces of fish and keep fish aside for marination.<br />
<strong>-</strong>Cook it in tandoor and serve hot with onion lachha and green chutney.</p>
